Our motivation is to becoming more healthy. I have PCOS, which can be helped through diet low in sugar and high in whole foods. This challenge is perfect for me. We also want to lose some weight. Hopefully, this will turn into a lifestyle change that will be beneficial for the whole family.
The only rule we are letting slide a touch, is the local meats. We have a bunch of meat already in the freezer, and we intend on eating it. Baby steps people, baby steps. We feel like this is already a huge stride, and if it works out, perhaps we will go a little further and begin buying our food at more local places.
Our first real meal was breakfast this morning. We made oatmeal, and added a touch of milk and some blueberries. Usually I also add a bunch of sugar to sweeten it, but since we are trying to eat healthy, we tried it without. In our prayer, I prayed it would taste good without sugar, and you know what, it was delicious! Even my 16 month old ate every bite and loved it.

We had oatmeal as well this morning. I, however, did sweeten our with a little Organic Blue Agave Nectar. We also used blueberries in ours and it was delicious. This is nothing out of the norm for us. We eat a lot of oatmeal. I figure we can just alternate eggs and oatmeal and we should be all set :)
