Day 10 already?

I just realized that today is the 10th day of our challenge.  We have enjoyed delicious food these last 10 days, and I have learned a few lessons.  Some of my favorite meals were the tomato soup, fish and quinoa, and spaghetti.  Tonight, we are finishing up the 10 day challenge with whole wheat pizza.

I will admit, we were not perfect during the whole challenge.  We attended the Puyallup fair and enjoyed a taste of Elephant Ear, and a scone.  We also went to our one annual Mariner's game, and well, you can only get garlic fries at the ball field.   Despite the couple hiccups we had, I think it has been a great experience, and would recommend the challenge to anyone who is willing to open their mind.

Some of the things I gained from the challenge is a new perspective on what we are actually putting in our bodies.  As we began the challenge, we separated the pantry into things that were okay, and things that weren't.  There was much more on the not okay shelf than the items that meet the challenge.

I learned that eating real food takes more planning.  I made all my own breads/tortillas during the challenge, and while it isn't hard, it does take some time and planning, both to make sure you have everything you need to cook the item, but also the time it takes to prepare such foods.

I learned that switching from country potato bread to 100% whole wheat everything can do a number on your digestive tract.  My tract is different than most due to some surgeries, however, I noticed that my system had a hard time the first few days with all the whole wheat.  I am pleased to say, that I think I have adjusted, and I don't really want to go back to white.

I have gained a taste for whole wheat.  I am still not a huge fan of red wheat, but this white wheat is pretty darn good, and definitely a step to accepting red wheat.

I also learned that just because it is "real" food, doesn't mean you don't have to watch what you are eating.  I didn't lose any weight during these 10 days.  It is okay with me, but just because it is real doesn't mean it is diet food.

I learned that this is possible and can be a way of life.  I liked the taste of many things I ate.  I expanded my horizons and wasn't afraid to try to make things a little differently and more from the earth.  It is possible to feed kids real food.  Alice loved almost everything we ate.

So what now?  The Lybbert family is going to continue the challenge for the 100 days, with a couple exceptions.  We realized that although we could try to be perfect, we are not going to.  We know there are social events and family gathering where we cannot control what is served.  In those situations, we will eat what is there.  We may also be a little lenient on the sugar aspect, but eat it VERY sparingly.  (I really miss a good icecream, and Breyer's meets the criteria except sugar).  We are planning to stick to the no fast food, and at home, we will try to cook only real food, and more from scratch.

I just want a giant, ice cold, orange Fanta...HELP!

Can I just say...I want candy, chocolate, anything fried and anything but what I should be eating. I know I am dehydrated, but I don't want water, I want a giant orange Fanta. Maybe I am PMS'ing, maybe I am just over this challenge. maybe I just need a cheat day? I don't kow but right now I am going to the water fountain to fill up my water bottle and drink all 27 disgusting oz of it.

I'll let you know later how I fare...HELP PLEASE!

Day 4::5::6::7

OK, so I'm a little behind, but in my defense we had a very busy weekend. This post will cover days 4, 5, 6, and 7.

Days 4 & 5 were weekend nights, Friday and Saturday. I feel like we are really in a good routine as far as breakfast and lunches. We are even doing OK as far as snacks. We really don't have any other options in the house so that helps out a lot! Dinners for Friday and Saturday were great...leftovers! You all know by now that I really like leftovers and I am not afraid to eat them up. Thanks to Fresh 20, we had leftovers from the Peanut Butter Pepper Chicken Stew and the Vegetable Casserole. These leftovers fed us on both days. I chose to save our last meal for the week for Sunday. I like to have a nice dinner on Sundays and we were having dinner guests.

Sunday morning I opted to change things up a bit with some whole wheat blueberry pancakes. Our family loves pancakes and I have been making this recipe for about three years now. I don't always add blueberries, but I had some that I just HAD to use and they made a lovely addition.

2 eggs
2 C milk
1/4 C vegetable oil
2 C Whole Wheat Flour
3 Tbsp Agave Nectar
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
3/4 C unsweetened applesauce
1/2 tsp cinnamon
1 1/2 C blueberries (optional)

beat the eggs with a whisk until they are fluffy, then beat in the rest of the ingredients until smooth. If you are adding the blueberries, gently fold them in with a wooden spoon. I use an electric griddle on about 325. This recipe makes about 20 pancakes. Make the whole batch...if you have leftovers freeze them, defrost the night before use and pop them in the toaster for a couple of minutes to reheat. These make a great breakfast when you are in a hurry. Serve with pure maple syrup or a dollop of fresh whipping cream~


We had dinner guests on Sunday so I wanted to make it special. We had Greek Stuffed Chicken, salad with balsamic vinaigrette dressing, brown rice and basil, and whole wheat baguettes with real butter. I am very sad I didn't get any pictures. I had it all laid out buffet style in pretty serving dishes and it was very pleasing to the eye. I was really anticipating our guests reaction to our dinner. I am please to say they really enjoyed it and I got a lot of compliments on the chicken.

As far as today, we were in our normal routine for breakfast and lunch. G and I had leftover pancakes and milk. I had the day off today and I had about a million errands to run do rather than packing myself a lunch I opted to try my first experience with dining out. I chose one of our favorite restaurants...Chipotle. I normally have a big fat burrito bowl. Today I opted for the chicken salad. All the ingredients are good to go except the rice. It is white rice so I choose to leave it out. It was tasty even without the rice and it was a nice treat.

On another note, one of my errands today was grocery shopping. I went to Whole Foods today because I knew I could get the majority of my groceries there so off I went. I know in an earlier post I mentioned I was not too concerned with budget right now, but today I was able to stay within my normal weekly grocery allowance of $150. I even had to stock up on rice and olive oil :) So now I know it can be done. I think I will try a little harder to stick with my budget.

I have been looking forward to this dinner all day so I was excited to get home from the store and get busy. Tonight was grilled rib-eye, sauted carrots, zucchini, and green beans, and whole wheat couscous. Can I just say it was so good. I was so excited to eat I didn't get a picture of mine, but while G was trying to decide if he was going to eat I was able to snap a picture of his plate. Don't mind the pre-cut meat :)

I can officially day we are 7 days down and we are doing really well...If any of you out there are attempting this challenge I hope you are hanging in there. If you are on the fence try it, it is not that bad.

Day 3 ~ What a Day!

Can I just say today has been a whirlwind! Last night we woke up at 4am to the loudest thunderstorms I have heard in a long time and a lot of rain. Why do I tell you this? Because the circumstances in our lives can often affect the food we choose to eat. We can plan all day for the perfect diet or menu, but when it comes down to it sometimes life can get in the way. I am hoping to demonstrate through this blog that even people with the craziest of lives can eat better. Now back to my story...

Today was my son's first day of preschool. He woke up like it was Christmas morning. We got his stuff together, I made breakfast and lunches and we headed out the door only to find the craziest traffic I have seen around here lately. We tried our normal route and found it was blocked, so we tried for an alternate route. We sat in traffic for one and a half hours only to move 1 mile. I sadly had to tell my very excited three year old that he was not going to get to go to school today. While we were waiting I turned on the radio to find out that most of the Philadelphia area had major flooding and many major highways were shut down. I called my work, my husband called his work and we decided we were not going to go in today so we headed home :) I like days like this.

Here is where the unexpected came in. Since I was home, G and I decided to go to playgroup. Usually at some point during play group all the moms and kids break out their lunches. Today was easy, there was nothing extra offered so we just ate what we brought and since our lunches were already packed for school and work it was pretty easy. What I have decided when it comes to social engagements is 1) make the decision about how you are going to handle food before you go and be strong and 2) if you are worried about not being able to eat anything while you are there, bring something to share, most people who host a social engagement will not turn down a dish :)

Just so you know I spent my afternoon sleeping and it was blissfully wonderful...

Now what we ate today...

Breakfast was oatmeal and strawberries today, one meal has to be simple and no fuss right?

Lunch was leftovers from last night and I must say it was even better today. All the sauce and spices had to chance to marry and get happy :) We had a couple of snacks, I had to tahini spiced pumpkin seeds (YUM) and some orange bell pepper. I have not drank enough water today and I am feeling it. My nap kept me away from my 2pm sugar melt down so one snack was good for the day.

Dinner was a vegetable casserole from Fresh 20. This recipe can be easily adapted to include any variety of veggies. I call these kind of meals "pantry meals" you can't really mess them up. We all usually have some type of pasta on hand, right? And how many of us over-buy produce? I know I often do. I get to the end of the week and have this drawer full of leftover produce and no recipes to use them in. This is when you make a pantry meal, boil up some pasta, chop of what ever veggies you have on hand, saute them with some EVOO, garlic, and onion, add some salt and pepper and you have a meal fit for a king! Anyway back to my dinner. This veggie casserole is great for this type of meal. I will be using the bones of this recipe again when I need to use up produce. The little surprise in this dish was feta cheese. It added just the right amount of gooey and tanginess (is that a word?) to the dish. We also had plenty of leftovers so one of my weekend night dinners are covered ~ YAHOO!

Doesn't this just look delish? I also like to include proof that these recipes are "kid tested, mother approved". If you have your doubts about your kids give them a chance to try. I have not been able to get my son to eat a bell pepper, zucchini, or tomatoes, but today he tried a bell pepper and he ate his whole dinner that was packed with zucchini and tomatoes. Baby steps people don't expect too much, but expect something. We have a rule in our house. Mom only makes one meal...if you don't like it breakfast is in the morning. When kids are hungry enough they will eat what you put in front of them. They WILL NOT starve!

Now, about this little piece of deliciousness. My husband is having a meeting for church at our house tonight and asked me if I would whip up a little treat for the guys coming over. UH OH! I hadn't thought about treats during this challenge. I didn't want to run to the store so I had to use what was on hand. I remembered this recipe my sister made for us while I was out visiting. It is Coconut Lime Banana Bread and it is divine. I had to change it up a tiny bit to make it suitable for the challenge and it still came out wonderful.

INGREDIENTS:
2 Cups All-purpose Flour (I used whole wheat white flour)
3/4 tsp baking soda
1/2 tsp salt

1 cup sugar (I used 3/4 C organic raw sugar, next time I will try Agave Nectar)
1/4 cup (1/2 of a stick) softened butter
2 eggs
1 to 1 1/2 cups smashed bananas (about 3 bananas)
1/4 cup yogurt (vanilla, plain, strawberry, whatever flavor) (I used plain yogurt)
3 Tbl apple juice or applesauce
1/2 tsp vanilla
1/2 cup coconut flakes (I used unsweetened coconut)
1 Tbl coconut to sprinkle on top of bread

Glaze:
1/2 cup powdered sugar (I used Organic raw sugar again, I made it ahead of time so the acid from the citrus had a chance to breakdown the sugar and it made it into a syrup)
Appx 1 1/2 Tbl fresh lime or lemon juice (appx 1 lime; you may substitute store-bought lime or lemon juice if needed)

I think often times you can modify and recipe to make it fit your need, give it a try and don't be afraid to fail sometimes, goodnight all~

What we've been eating

Day one:

  • Oatmeal with blueberries
  • Burritos with whole wheat tortillas, whole black beans, and cheese
  • Celery sticks with 100% peanut butter and raisins
  • Spaghetti over whole wheat pasta (one of the whole wheat items I do like)
Day two:

  • Poached eggs with whole wheat toast
  • Grilled cheese with deli sliced turkey, plums
  • Celery sticks with peanut butter and raisins
  • Baked chicken, sweet potatoes, and steamed broccoli
Day three:

  • Whole wheat pancakes, with 100% pure maple syrup
  • Peanut butter and banana sandwiches on whole wheat bread, grapes
  • Dinner will be either leftover spaghetti, or tacos
The spaghetti sauce was very tasty, but it is chunky.  Dusty said he likes his sauce more smooth and saucy, so maybe next time I will puree it.

We are trying to keep it simple, but try a few new things as well.  So far so good, although, Dusty has been sneaking a few things here and there.

Better than Bisquick


The Lybbert family has been doing pretty well with our challenge so far. My biggest worry, was actually the no refined flour part. I am not a fan of whole wheat bread, or most whole wheat items, I like the sweet taste of white bread. I got a wheat grinder for my birthday this last year, and I discovered hard white wheat. It has all the benefits of whole wheat, but has a much milder flavor. The nutrition is even almost the same.

The only place I can find that sells it is our LDS dry-pack Cannery. On Tuesday, I drove the 6 miles and picked up 25 lbs for $11.50. I came home and ground up a few cups in my new wheat grinder. I then proceeded to make bread, and some whole wheat tortillas.

The bread was delicious! and the tortillas were okay. They taste great, but they ended up being crispier than I wanted them and they don't roll up very well.

This morning, I made whole wheat pancakes. I will admit, I am not a huge fan of pancakes, and when they are made, Bisquick must be used, but I tried the recipe, and WOW, they were better than Bisquick! We ate them with a little butter and pure maple syrup and I am sure we will be making these often.

Here is the recipe I used:
1 cup whole white wheat flour
2 tsp baking powder
1/2 tsp salt
2/3 C skim milk
1 large egg (mine was an Extra large)
1 Tbsp canola oil (I used vegetable)
2 Tbsp honey

Mix the dry, mix the wet, add together and stir until moistened, a few lumps are okay. Grease a griddle and cook them up just like regular pancakes.

Overall, the white wheat is a life saver! I love the taste of all the baking, and it is good for you.

Day 2 = one very proud wife...xoxoxo!!!

So before I get to the details of the day I have to tell you why I'm so proud!!! My hubby got free tickets to the Phillies ~ Braves game tonight from work...surprise! I was very happy for him till I got on the road coming home from work. I was going to get home just in time for him to leave. Oh no! What was he going to eat tonight as a ball field that would fit with our plan. We didn't have any leftovers from last night...how on earth was this going to work? So I was big about it and told him it was his choice, if he wanted to eat a ball park hot dog I would not hold it against him. And you know what he said in return...he said he really wanted to stick with the challenge :) This made me so proud! He said he had a sandwich left over from work, he grabbed some fruit and trail mix and headed out the door with the promise that I would save him some dinner ~ of course, I said YES.

On another note, hubby came home from work today and searched the whole house for Advil...can anyone say caffeine withdraws! lol

Now about our day. It was great, but it was eye opening and I am glad I did some prep last night in preparation for the day. I made most of my hubby's lunch last night, except the sandwiches...who like a soggy sandwich? NOT ME. I boiled a dozen eggs, I made rice for two of our meals this week and I pre-chopped some veggies. It took some time yesterday, but it was so worth it today. I have to get up at 5:30 to get us all out the door by 7:30 and I'm not trying to get up any earlier.

Breakfast, again, was simple. Eggs, toast and a 1/2 of a banana. The hubby had his usual. his morning G was dipping his banana into his peanut butter toast an he kept telling me how delicious his breakfast is. For a momma it is the simple things that bring us joy.

Lunch was simple! Marcus had his menu and I packed the last 1/2 of a turkey burger to put over some salad greens with the left over tomato salad from last night. You will see a trend in my lunches. I like leftovers :) I also packed a couple of snacks. a delicious peach, a cheese stick, some roasted almonds, and some yogurt. I also packed a Trader Joe's fruit leather for my 2:00 sweet tooth. This is the time of day when I tend to reach for $0.75 and a Snickers or Twix bar. Amazing enough that little piece of dehydrated-no sugar added fruit really hit the spot. I know it seems like a lot of food, but my breakfast goes around 6:30 so waiting till noon with no food is just not going to happen and dinner isn't till around 6:30 and that wait doesn't happen either. If I wait I drive through the Wendy's drive through for a 5 piece nugget and a junior vanilla frosty and we don't want that to happen do we?

Dinner was, again, from Fresh 20 and it was amazing again. We had Peanut Butter-Pepper Chicken Stew over brown rice. It was tasty, full of veggies, a little sweet, a little savory, and very filling! So far Fresh 20 gets a 3 out of 3 and I love not having to plan what's for dinner.

*Fresh 20 is not paying for me to advertise for them, I just think it is amazing and for so little you get so much.

Below is our dinner. G gobbled (my husband loves it when I use that word) it up even though it had a little kick. It tasted like a Thai dish, but with very non-Thai ingredients: Chicken, onion, garlic, shredded carrot, diced potatoes, diced tomatoes, cumin, red-pepper flakes, chickpeas, and all-natural peanut butter. All that pipping hot served over brown rice. Can I just say YUM and I can't wait for my lunch tomorrow...
